Combination Ovens/Steamers
Combination Oven/Steamers, affectionately termed “combi ovens” on occasion, are designed to provide the ultimate variety in a kitchen. Most of them come with 3 cooking modes- steam, hot air, and combination. Steam mode keeps flavors in foods, using steam to cook or boil instead of a stock pot. Hot air mode uses circulated air to cook in a manner similar to a convection oven. Combination mode – the key to a combination oven- uses both steam and hot air to cook foods, giving a perfectly even cook to chicken, fish and other items at almost twice the speed. Combination ovens are great for cooking, boiling, broiling, steaming and rethermalizing, saving space in any kitchen.
